Minted Onion Rings

New York Governor’s Mansion Executive Chef Noah Sheetz used this recipe when teaching the youth at Roots and Wisdom how to preserve the food from their garden (see his post on the subject here). The onion rings will be served at the New York Executive Mansion in Albany during the 2010 State of the State reception.

MINTED ONION RINGS
*adapted from the Farm Journal’s Country Cookbook

1-quart vinegar
1/4 cup sugar
2 cups fresh mint leaves or 1/4 cup dried mint leaves
4 cups peeled sliced onions

Sterilize 4-pint jars and lids.

Combine vinegar, sugar and mint, tied in cheesecloth, in a saucepan. Heat gently for 10 minutes; remove from heat.

Add onions and heat to boiling. Remove the mint. Pour into hot pint jars; adjust lids. Process in boiling water bath (212 degrees) for 5 minutes.

Remove the jars and complete the seals unless closures are the self-closing type.

Makes 4 pints
