Simple Blackberry Jam

Simple Blackberry Jam
-makes about 2 cups

This is a quick, simple jam full of blackberry flavor. For about 2 cups worth, or more than enough to fill My Favorite Birthday Cake, with enough leftover for scones, start with 1 pound fresh blackberries. In a small pot, combine the blackberries with the juice and zest of 1 small orange (or other citrus) and 1 1/4 C sugar. Gently stir over low heat until the sugar dissolves. Bring to a boil and cook rapidly for about 20 minutes, stirring occasionally, until the mixture thickens. Stir in a tablespoon of butter and remove from heat. The jam will set as it cools. Store in the refrigerator.
