Pickled Cucumber Roll-Ups Recipe


  • English cucumbers: 2 (they have fewer seeds and a thin skin, perfect for rolling)
  • Vinegar (white or apple cider): ½ cup
  • Water: ½ cup
  • Sugar: 2 tablespoons
  • Salt: 1 teaspoon
  • Dill: Fresh, chopped (optional for extra flavor)
  • Garlic: 1 clove, minced (optional for a garlicky kick)
  • Red pepper flakes: A pinch (for a spicy twist)


  1. Slice the Cucumbers: Use a mandoline slicer or a sharp knife to thinly slice the cucumbers lengthwise. Aim for slices about 2mm thick. They should be flexible but not too thin.

  2. Make the Pickling Solution: In a bowl, mix together vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve. Add in the dill, garlic, and red pepper flakes if using.

  3. Marinate the Cucumbers: Place the cucumber slices in the pickling solution. Ensure they are well coated. Let them marinate for about 30 minutes to an hour in the refrigerator. The longer they marinate, the more pronounced the pickling flavor.

  4. Drain the Cucumbers: After marinating, gently drain the cucumber slices. Pat them dry with a paper towel to remove excess moisture.

  5. Roll Them Up: Lay the cucumber slices flat and roll them tightly. You can use a toothpick to secure them if needed.

  6. Chill and Serve: Chill the cucumber roll-ups in the fridge for about 10 minutes before serving. They are perfect as a refreshing appetizer or a side dish.
